Spinach Scramble
Makes 1 Serving
Ingredients:
¼ cup Roma tomato, diced
¾ cup spinach leaves, cleaned and dried
5 egg whites
1 ounce feta cheese, crumbled
½ tablespoon fresh basil, chopped
Instructions:

In a small nonstick pan coated with vegetable spray, sauté tomatoes and spinach until slightly tender.

Whisk the egg whites together in a bowl and add to the pan. Cook, stirring, over low heat until almost set. Add the vegetable mixture, cheese, and basil. Cook to desired firmness.
