Sautéed Seasoned Chicken and Veggies
Makes 4 servings

Ingredients:

1 lb skinless, boneless chicken breast
Mrs. Dash salt-free seasoning, to taste
1 tbsp olive oil
1 cup chopped onion
1 cup sliced mushrooms
1 cup sliced zucchini
¼ tsp dried basil
¼ tsp dried oregano
1 tsp freshly minced garlic
1 can Bush’s Best garbanzo beans, drained and rinsed
1- 14.5 ounce can no-salt diced tomatoes
2 tbsp fat-free sour cream
1 tbsp balsamic vinegar

Instructions:

  1. Coat chicken breasts with Mrs. Dash seasoning

  2. Heat oil in a large skillet over medium-high heat; sauté chicken breast until brown, 2 minutes each side

    3. Add onion, mushroom, zucchini, basil, oregano and garlic, and sauté 
             for 4 minutes
  1. Reduce heat to medium and add remaining ingredients

  2. Cover and cook for 10 minutes

    6.  Serve over ½ cup brown rice
