Healthy Chicken Pita Pizza *Kid Friendly
Makes 1 Serving

Ingredients:

¼ cup chopped red and green peppers
1, 6-inch whole wheat or multigrain pita
1 tsp olive oil
½ cup tomato sauce or your favorite spaghetti sauce
½ cup shredded part-skim mozzarella cheese
1 cooked chicken breast, finely diced or sliced
1 small tomato, sliced

Instructions:

  1. Preheat oven to 450 degrees F

  2. Cook peppers in a pan and set aside

  3. Place pita on a baking sheet and spread with olive oil, then tomato sauce

  4. Sprinkle shredded cheese over the sauce

  5. Top with cooked chicken, peppers and sliced tomatoes

  6. Bake for 10 to 12 minutes then serve
Note: Experiment with other healthy toppings such as: mushrooms, chopped broccoli and sun-dried tomatoes.
