Chicken Salad with Grapes and Walnuts
Makes 4 to 6 servings

Ingredients:

4 cups cubed cooked chicken (about 1-½ lbs.)  You can either boil the chicken or cut   and brown  in pan.
1 cup walnuts, chopped
1 cup celery, chopped
1 cup seedless red grapes cut in halves
3/4 cup low-fat mayonnaise
3 tablespoons of white wine vinegar
2 tablespoons fresh tarragon finely chopped
1/2 teaspoon black pepper

Instructions:

Toss together all ingredients in large bowl until combined well. Serve on whole grain bread or over mixed greens.
