Southwest Chicken Breast Wrap
Makes 14 halves

Ingredients:

1 ¼ lbs chopped cooked skinless, boneless chicken breast
¼ cup light mayonnaise
1 tsp ground cumin
½ tsp chili powder
1 medium chopped red pepper
¼ cup chopped red onion
2 cups frozen thawed yellow corn
3 medium scallions, chopped
1 cup canned Bush’s Best Black Beans, rinsed and drained
1 package of 10-inch whole wheat tortilla

Instructions:

  1. Boil chicken breasts in a large pot of water until cooked

  2. In a medium-sized bowl combine mayo, cumin and chili powder

  3. Add in chicken, red peppers, red onion, corn and scallions, mix well

  4. Gently fold the black beans into mixture

  5. Cover and refrigerate for at least two hours

  6. Scoop 8 oz of mixture onto tortilla wrap, roll it up, cut in half and serve
