Hawaiian Luau Halibut *Kid Friendly
Makes 4 Servings

Ingredients:

½ cup peach fruit spread or peach preserves
½ cup juice-packed pineapple tidbits, drained
2 tablespoons apple cider vinegar
4 halibut fillets, about 4 to 6 ounces each

Instructions:

  1. Preheat oven to 425 degrees F

  2. Combine olive oil, lemon juice, garlic, oregano and thyme in a small bowl, mixing well

  3. Add cherry tomatoes, shallots and kalmata olives and mix well

  4. Place salmon fillets into a baking dish

  5. Spread the olive-cherry mixture onto salmon, coating the salmon completely

  6. Bake salmon for 20 minutes or until fish flakes easily with a fork
